Sour beer
A sour beer is a beer that has an intentionally acidic, tart and sour to taste. They are made by allowing wild yeast strains into the brew or the same bacteria that turns milk into yogurt and cucumbers into pickles. The best sour beers are a complex thirst-quenching delight. Fruity sours are colourful, refreshing and moreish, a Berlinner Weiss is more beer-like but refreshingly tart, and a Gose brings a strong saltiness to the flavour mix.
